When I was a kid, my mom used to call me the “Soup Queen.” When I met my husband’s family, they were shocked at how much soup I would eat. When I lived in NYC, I considered a can of soup and steamed broccoli a full meal. So, it’s no surprise that I often set out to find the best version of my favorites. Here’s my adaptation of a lentil soup recipe I originally found on Epicurious. It’s super simple to make, leaves plenty of leftovers, and can be doubled or tripled for a crowd. Serve alongside crusty bread.
