Ina's Creamy Tomato Bisque

Is there anything better than a warm bowl of tomato soup? My favorite, by far, the one I dream about, is the one from Bistro Jeanty in Yountville. However, when you live over 3000 miles from that restaurant, you have to make do on your own. I was hoping and praying that Ina's tomato bisque would suffice. It is very good, but no Bistro Jeanty. I have found other tomato soups without the additional cream, too, that I think have tasted better. That said - this was extremely easy to make and looks beautiful. I did like the addition of leeks and the texture it gave to the soup.




Let's break it down.


 

PREP

As long as you have everything out, this was super simple. The only major (if you can say that) thing was chopping up the shallots, onion, and leeks. Everything else was add this, stir it up, yadda, yadda, yadda.


COOK

Again, super simple. Add the veggies all at once to the butter and olive oil and saute before adding the rest of the ingredients. Boil, simmer, plate and sprinkle with parm and parsley. It's as easy as that!






REVIEW

This was good, not great. As I mentioned above, my bar is high on tomato soup. I really enjoyed the leek addition to this, but there was almost too much cream, which made the tomato flavor fade a bit too much for my taste. However, the ease of this makes me think I'll likely make it again.
