Chicken Pot Pie
Whenever I need to make a meal for a "meal train," whether it's a friend who just had a baby or someone going through a tough time, I always make Chicken Pot Pie. It hits all of the notes of comfort, feeding a crowd, refrigerates and reheats well, and is just plain yummy (my husband always comments on how I can take down three servings in one sitting). I make mine a little different by using a puff pastry for the top, mainly because I find pie crust really dry and crumbly. If you're pressed for time, you can skip a couple steps here and easily use a store-bought rotisserie chicken.
