Chicken & Dumplings

I think chicken and dumplings is the ultimate comfort food. During COVID, I made it my mission to find the best chicken and dumplings recipe out there. Alison Roman’s is the winner by a landslide. The downside? It takes way too long to make with two kids at home remote learning and wreaking havoc. What to do?? CHEAT! Get a good rotisserie chicken and make her recipe using boxed stock, then add a little thyme, and you’re good to go in a fraction of the time. My kids give this 10 stars and two thumbs up. Winner, winner, chicken dinner.
