Weekly Menu 10.31-11.6
My last post was after a 2 month hiatus, and now this is after a 4 month hiatus! I need to get to work! As most of you know, I moved into a new home, but what that really means is a "new" kitchen. It's been...tough. The appliances are from 1988 and they are not in the working condition I was used to at our previous home. Two ovens? Nope. One with one rack and only two levels. Also, no broiler option on the oven. And, according to my little in-oven thermometer that I bought, it runs about 50 degrees higher than what it says on the dial. The stove? Electric. It basically works at a really high heat and not much in between. So, I am adjusting my usual menus as necessary after a bunch of burned sweet potatoes and chilis that had burned on the bottom of the pans. C'est la vie. I'll keep you posted as we design the new kitchen, and in the meantime - expect many stovetop menus as well as some slow cooker, air fryer, and take out options. Lots of take out.
