My son requests stuffed peppers at least every other week. He loves being able to scoop out the filling with a spoon, using the pepper like a bowl. I created this recipe with inspiration from one I found on Delish.com and from Giada de Laurentiis. I love how Giada uses orzo in her stuffed peppers, but I needed something with a little extra protein to feed my family. The orzo cooked in chicken broth, along with the ground beef and pecorino cheese, makes these stuffed peppers next level. Make sure to blanch the peppers before filling, which will ensure they're soft enough when they come out of the oven, and will keep that bright color of the peppers.
